Purple Stripe Garlic is an heirloom variety grown in the mountains of Cao Bằng, Vietnam, hot air-dried and ground slowly enough to keep its rich, buttery aroma intact — a flavor reviewers have described as nutty brown butter, not sharp raw garlic in powder form. It's sourced through DACE, a social enterprise working with Hmong farmers in Vietnam's remote highlands to grow heirloom spices using regenerative, rain-irrigated practices, since the region's mountainous terrain was never suited to large monocrop farming anyway.
Use it in place of fresh garlic in sauces, stews, and dressings, or stir it into a rub before it hits the grill. One ingredient — ground garlic — doing more work than the bulk stuff ever could.
