This baking chocolate starts with single-origin cacao from Semuliki Forest in Uganda, sourced from a grower-centered organization working with over 1,000 organic smallholder farmers. Raaka paid $4.50 per kilogram for this cacao in 2022 — nearly double the Fair Trade floor price. That's not a marketing claim. The pricing is published on the inside of the wrapper because Raaka believes transparent trade means actually showing the numbers, not just displaying a logo.
The beans are unroasted. Most chocolate makers roast heavily to develop that familiar "chocolatey" flavor — which also burns off the naturally fruity, complex notes that the cacao developed in the soil. Raaka keeps those notes intact. The Ugandan beans bring caramelized sugar, fig, and cinnamon undertones that carry through into your baked goods and make them taste like something you'd actually remember.
Sweetened with maple sugar, not refined cane sugar. The result is a bittersweet baking chocolate — rich, complex, fruity, with just enough sweetness — that works beautifully in brownies, cookies, ganache, or anything else that starts with "melt the chocolate."
