Most flavored syrups are exactly what you'd expect: base syrup, extract, "natural flavor." The cinnamon version tastes like cinnamon candy because it was made to taste like cinnamon candy — not cinnamon.
Under the Bark does it differently. A whole organic cinnamon stick goes into each batch of pure Minnesota maple syrup and stays there. The infusion is slow, and the result is actual cinnamon — woody, warm, gently spiced, with a complexity that works with the maple rather than trying to cover it.
Austin and Madeline Miller run Under the Bark from a 61-acre homestead in Lonsdale, Minnesota, where they've been making small-batch syrups since 2011. The business started under the name Three Rivers Farm on a single conviction: that real maple syrup should function as an everyday whole food sweetener, not just a pancake topping. The flavored syrups carry that through — real ingredients, real infusion, no extract standing in for the thing itself.
The Cinnamon is the one you reach for on oatmeal, in morning coffee, in a brown butter apple situation, drizzled over roasted sweet potato or a bowl of yogurt. It also makes a very good old fashioned.
